legend is caesar cardini, owner of the caesar's cafe in 1924, but others say it was his head chef, santini who did the actual mixing on a busy july 4 weekend when they ran out of food. we are going to post a video soon with 2 versions: "antigua" y "nuevo" (popular since the 1990s)

actually, the TRUE recipe has NO mustard (original salad created by Caesar Cardini's chef, Santini in 1924).

the true recipe calls for pure ground mustard not, hot dog mustard, and the bowl looks new, a good chef uses a seasoned bowl
