Because the best grip from the curved tyre is found in the centre so the more upright the bike thebetter the grip mid corner and the best way to keep the bike upright is to move the centre of gravity to one side by hanging off the bike.

I thought that riders would 'hang off' there bikes because in the old days bikes where unwieldy, but today they are light with excellent handling, so why do riders still do this?
