yes, you're quite right! But, sometimes with boudin blanc because the mixture is soupy it's easier to tie off. I find that technique works better with sausage that is dried.

Gin in the sausage? What a great idea! And yes, if we had the luxury of an American Kitchen Aid with one of those cool attachments we would have DEFINITELY used it. I don't know if it would have made the same video though ;-)

I have a sausage stuffer attachment for my KitchenAid mixer; it works a lot better than your cake decorator.But I must say, I'd much rater watch a video of you gals making sausage, than one of me making it.For my liquid I use gin that's been in the freezer overnight. Little gin in the sausage -- little gin in the stuffer. |
