but 4 mine, i've use 3 gun mages that used annihilators together with the invincible accesory and any magic boosting stuff, it can damage almost 23,000... but if he's oversouled

Save after you kill 1 or 2, reload when one oversouls. Or you can escape when it oversouls.

how do you know how many of that kind you need to kill? I mean, maybe I wanna oversoul a certain enermy and then the one before that gets it instead.

You kill a certain number of other fiends of its type and the next one will oversoul. For Paragon, you kill Ultima Weapons or Omega Weapons. For Chac, you kill Gucumatz or Kukulcan. etc.
