well, your right on the transfer, It will allow a MUCH bigger control but acctually he couldn´t chill the glass cause it would be moist and as much as the chocolate would stick to the sides, the littlew amount of water that always forms on the sides of the glass will run down and ruin the chocolate creating a sloppy decoratñion affect, no matter how well it was done before the water runned it down.
